Update on Pickled eggs


We have now tasted our pickled eggs. They look oh so pretty.

Verdict:
  • The don't taste pickly (yes I think I invented a word but it is the most descriptive) enough.
  • The texture of the white pink is oh so very very wrong, almost gag worthy.
  • The taste though is fine and the yolk is really yummy.

So far I have tried them in 2 salads.
  • Just a regular salad as a side to fish, won't do this again
  • In a pasta salad, this I will do again. It seems when eaten with pasta the texture of the egg just blends in and you don't notice yourself eating them. I am sure it add flavour. But it at least adds protein to a summer meal.

Pickled Eggs - with challenge

What to do with a massive abundance of eggs i.e. 8+ dozen eggs?

Option 1, have an egg overdose. I tried hard oh boy did I try hard. Eggs for lunch, eggs for afternoon tea and quiche for dinner. So after a day or two of that, I got pretty jack of eggs.

Option 2, feed them to the dog. Opted out of that dog food is cheaper.

Option 3, cook-a-thon. Meringue, magic bean cake, pancakes with double eggs, smoothies with 4 eggs. custard...... ok so I have a newborn this is not going to happen. I may have made each of those things once over a week. I need more hands, more sleep and more time.

Option 4, preserving the eggs. Insane yes. Has this ever been done of course it has. So we decided to brine some and pickle some. Do they taste good, no one will tell us.

Today we look at pickling the eggs.

Step 1. Boil 28 eggs (tip boil extra you may completely cock up the shelling of some and they wont be usable)






Step 2. Peel the eggs, oh yes have you ever seen an egg peeled. I am the master of all masters of egg peeling. I challenge you to better my peeling and share your pic.



Step  3. Pickle your eggs. We decided on a beetroot pickle.
RED BEET EGGS
1 cup red beet juice (from canned beets)
1½ cups apple cider vinegar
1 teaspoon brown sugar
a few canned whole tiny red beets (or several slices of beets can be used)

We fit 21 eggs in this jar. Looking now I am wondering if they are too cramped. Time will tell.


Step 4. Store in fridge and wait 1-4 weeks depending where you are reading before you get to taste test your efforts.

Plymouth rock egg stats over a year


I was meticulously recording egg statistics (among other things) for our hens every day.

On average our plymouth rocks laid 221 eggs per hen per year.  That works out to an average of just over 4 eggs per hen per week.

This average over the year includes each hen moulting twice (they do not lay through a moult), some hens going off the lay as they were injured, each hen going broody and not laying an average of 0.3 times each (they were not allowed to hatch so stopped being broody after 2 weeks or so). 

Average number of eggs per hen per month:
April            23
May             21
June             19
July              20
August         16
September   18
October       15
November   17
December   18
January       17
February     18
March         19

These hens were free ranged through the orchard and not provided any extra light or heat.  They foraged for between a third and two thirds of their diet depending on the season.  Feed costs should be very low on acreage as they can forage for most of their feed.

We had one hen who lays a different looking egg, she laid far more than the others, her eggs were not counted so that we have a more accurate average number of eggs for my old strain of plymouth rocks.  I also did not include eggs that were laid while we were away as they were collected by our neighbours and I did not want to impose that they also count eggs as well as feed and water them.

Chicks


We have our first little baby chickens. Such a cute little things. We didn't have great success with our first attempts at an incubator. Only 6 chicks hatched a handful others were very close, I am sure I even heard some of them piping but the temperature changes were just too great for the poor little things. But we still have 6 little cuties to play with.

The breed is Plymouth rock. They are a large breed. Good layers and good for meat too.
